Description
Drywors is a very famous South African Snack with high levels of protein (perhaps one of the highest on the market).
It is very similar to Biltong ingredient wise, but the applied process if quite different as it takes the format of a fine sausage.
I use collagen casing as they are easier to strip off when it comes to eating the Dryworse. It also allows to extend the shelf life much longer, and can last for months without spoiling (as long as kept in a dry place).
All my process is manual, from the initial meet mincing (twice) to the final cut and packing.
